Low FODMAP Cooking + Learning with Chef Ming Tsai and Dietitian Kate Scarlata

I am very excited (like really, really excited) about this upcoming Low FODMAP tasting with celebrity chef, Ming Tsai on November 7th from 7-9 PM at THE BOSTON BUTTON FACTORY 50 Melcher Street in Boston, Massachusetts.

I have been secretly hoping to have Chef Tsai cook up a low FODMAP meal for some time. Last spring, I was fortunate to discuss this idea with his dietitian team member, Rebecca Noren.  And with coordination from Foodicine Health, a non-profit with a great mission to help people on special diets have access to the foods they need… the event is on the books!

Chef Tsai explains his personal family experience with food allergies,  “When we found out my oldest son was allergic to 7 of the top 8 food allergies I thought it was an unfunny joke from upstairs. Though he is now allergy-free, we had a few experiences where restaurant managers were frustrated they had to accommodate my son’s food allergies. As a chef, it seemed like such a simple solution to accommodate a guest with food allergies because I was consistently serving families with food allergies at Blue Ginger. In 2009, I helped pass the first food allergy bill in Massachusetts to help create safer restaurant environments. The system I created, The Food Allergy Handbook, allows us to keep track of every single ingredient that goes into a dish. Additionally, Blue Dragon is 100% peanut and tree nut free. This way, I can ensure that between our system and nut free kitchen, customers with life threatening food allergies can safely enjoy a delicious meal. At the end of the day, all families are welcome regardless of their allergies, which to me is the most important.”

In this upcoming program in Boston, Chef Tsai will cook up a few low FODMAP dishes to share, I will talk about the low  FODMAP diet and we’ll all enjoy some low FODMAP bites! How cool is that? 🙂
