carrot cake yogurt parfait

I love carrot cake.  In fact, my wedding cake was carrot cake. I made it myself and hand grated about a million carrots to make it, but it tasted great.  I frosted it with Bailey’s Irish Cream Frosting which was ridiculously amazing.  Recipe here!  Delicious.

But I can’t be making carrot cakes for breakfast, so I made a carrot cake themed yogurt parfait.  This is easy and tasty-infused with the flavors of carrot cake.

Start with Greek vanilla yogurt about 3/4 cup per person.

Mix in a dash of cinnamon.

Add 1/2 of the  yogurt to a glass, top with freshly grated carrots (about 1/3 cup) and layer another scoop of yogurt on top of the carrots. 

Sprinkle some ground flax seed and chopped pecans and enjoy.
