Who doesn’t like a cookie all dressed up for the holidays?

Meringues all dressed up

I whipped up some meringue cookies, dipped them in some melted semi-sweet chocolate chips and made them pretty for the holidays!

You could use store bought vanilla meringues or use the recipe I used, found here. I used my Lekue decorating tool, which I love to dispense the meringues on the cookie sheet. Meringues are simply made with whipped egg whites, cream of tarter, vanilla and sugar.

Dip the cookies, just one side in the melted chocolate (I melted in the microwave) and sprinkle with non-pareils or crushed peppermint candies. Set in the fridge to harden the chocolate a bit. I like to make small cookies, just bite size….super cute!

I found peppermint bits all ready to use made with sugar and corn syrup (not high fructose corn syrup!) by King Leo.
