These flourless chocolate cookies are so rich…you only need to eat one to fulfill even your most serious chocolate craving!

The ingredients are minimal.
I added a little Taza salted almond dark chocolate because I had some on hand–and because it is the best chocolate I have ever tasted but semi-sweet chocolate chips can be added as a substitute.
This cookie recipe calls for 3 egg whites –which made the batter nice and fluffy.
I made 32 smaller size cookies. You could eat 2 but I bet you’ll find one to be enough.
These cookies will make for a delightful low FODMAP treat this holiday season! I really think {and hope} you’ll love them!
Ingredients
- Makes 32 small cookies
- 3 egg whites
- 1 3/4 cup confectioner's sugar
- 3/4 cup unsweetened cocoa powder
- 1 1/2 teaspoons pure vanilla extract
- 2 tablespoons semi-sweet chocolate (rough chop the chips, I used Taza salted almond chocolate)-optional
Instructions
- Preheat oven to 350 degrees F.
- Line 3 cookie sheets with parchment paper.
- In medium-large bowl whip egg whites until fluffy-forming soft peaks. Gradually add in sugar, cocoa and vanilla.
- Fold in chopped chocolate, if using.
- Drop by teaspoonful onto baking sheets into 32 small size cookies
- Bake for about 8 minutes-should be a little puffed up with a slight crust on top of cookie.

Thank you for the yummy recipe! A long time ago, my mother and I found a similar recipe that we used to make when I was first diagnosed with Celiac Disease. They were a HUGE hit with our fellow G.I.G. Now I can make these for her for the holidays and we can share a wonderful memory again. =)
Because of the cocoa powder and chocolate, should Low-Fodmapers limit to two small cookies?

Aurelia, Yes, I think based on the chocolate and cocoa limits–2 small cookies is a good limit! Everyone loves these cookies–so they go fast!

Not for this recipe–sorry Heather. I often use pure maple syrup or maple sugar for my sweets recipes–but not sure how it would work in this type of recipe.

Calculated that it’s 1.3 tsp of cocoa/chocolate per cookie if one makes the full 32, based on your recipe.
