I had so much fun creating this topped banana and even more fun eating it. I love the magnesium rich seed and nut toppings. Food should be fun…especially for those on the low #FODMAP diet. 🙂 Did you know most Americans don’t meet their daily magnesium needs? This is concerning as magnesium likely plays a role in inflammation in the body, which is linked to a host of chronic diseases: cancer, heart disease, diabetes, obesity and gut disorders!
Lightly spread a layer of peanut butter and then top with a smattering of your favorite low FODMAP toppings, in acceptable portions, of course!
Fun, easy, nutritious and low FODMAP. Perfection!

My favorite way to make something with bananas is banana ice “cream”.
It is made just with bananas.
You freeze big slices then process them in a food processor until it has an ice cream texture.
I add other good tummy fruits, like pineapple and blueberries.
Or I mix in some cocoa powder to have choco-banana
The flavors are limitless.
oh and I like to add nuts for goodness and that crunch factor.

I like making banana ice cream, but I have a question because I usually put nondairy milk in it. I see on the grocery list you can have almond milk, but I’m worried I’ll choose the wrong one because almonds are higher on the FODMAPs list. I’m just starting this so it gets confusing, so I’ve been avoiding any packaged foods. Which brands of almond milks do you recommend (in the US)? I know most of them just changed their ingredients to take out carageenan, but I am finding conflicting info about that, too.

I am not a big fan of the alternative milks as they are often pretty devoid of any real nutrition. The Silk unsweetened almond milk has less additives in it. So for my clients that like it–that is what they tend to choose. I also like Trader Joe’s canned light coconut milk when making ‘ice cream’ treats suitable for the low FODMAP diet.
