I made some Huevos Rancheros this week. Say what?? I know, I am not a Huevos Rancheros expert, but I like the idea of layering a poached egg, salsa and cheddar cheese on a toasted corn tortilla. A great breakfast option for the weekend, right?
I never poach eggs but wanted to include a poached egg in this recipe. I just added the cracked eggs carefully to nearly boiling water, brought the water to a full boil, then shut off heat and let the eggs continue to cook for about 4 minutes. Then..I used a slotted spoon to remove them. It was pretty straight forward or perhaps I had beginner’s luck. I made these for my son Brennan and used traditional salsa. But it’s easy to make FODMAP friendly salsa for those with a sensitive tummy. I like to use either Muir Glen Fire roasted diced tomatoes, fresh tomatoes or more recently I found Trader Joe’s has some canned organic diced and fire roasted tomatoes with organic green chiles. These tomatoes can be slightly drained of the juice and mixed with some lime juice, cilantro and chopped green scallions (green part only!) and there’s a nice and easy salsa for the FODMAP crowd!
Today’s post is going to be short and sweet. I have a big week next week. I will be presenting 2, 2 hour talks {yikes!} in Boston and have a big writing deadline this Monday. For my fellow New Englanders, stay warm…brrrrrr…it certainly is chilly outside.
Ingredients
- 2 corn tortillas
- 2 eggs
- 1/4 cup cheddar cheese
- dash cumin and paprika
- Belly friendly salsa:
- 1, 14.5 ounce can diced tomatoes, juice drained (Hunts plain or Muir Glen Fire roasted plain or Trader Joe's Diced and Fire Roasted with green chiles)
- ¼ cup fresh cilantro, chopped
- 1 Tablespoon lime juice
- 3 scallions (green part only), sliced thinly
- Dash salt
Instructions
- Heat corn tortillas in non-stick skillet over medium heat until lightly bubbled and browned on each side.
- Heat water in small sauce pan until almost boiling and drop cracked eggs carefully in water bring to boil and turn off heat. Let eggs sit and continue to cook for about 4 minutes.
- Using slotted spoon, remove eggs, drain extra water and place them on cooked tortillas.
- Top eggs with about 1 Tablespoon of salsa and sprinkle of cheese.
- Heat slightly in microwave, about 30 seconds--don't want eggs to explode in microwave but let cheese melt a bit.
- Sprinkle with a bit of cumin and paprika if desired.
- EAT!

Try adding some cooked bay shrimp, imitation crab chunks or flakes, and maybe some diced celery for crunch to the Low FODMAP salsa….marinate in frig for a while…and YUM!!!!

Wow..Jackie–this sounds wonderful. Love some diced celery and shrimp. MMMMM… Some imitation crab products might have gluten–which is NOT a FODMAP issue but may impact some with digestive issues and also need to restrict gluten…just a FYI.
