These little no bake bite size cookies are just the right size treat!
I made these little cookies with just a few ingredients, including a little almond meal. In a small portion, 1/4 cup per serving, almond meal makes the Monash University FODMAP cut off and is a wholesome and nutrient dense ingredient.
A perfect little treat! Enjoy!
Today, my kitchen experiment is a low FODMAP chocolate and peanut butter lava cake! Oh yeah….stay tuned!
Ingredients
- Makes 10 balls; serving size 2
- 2/3 cup almond meal
- 2 tablespoons finely ground cornmeal
- 1 tablespoon maple syrup (I used the golden color variety)
- 1 teaspoon vanilla extract
- 1 teaspoon lemon zest
- 2 tablespoons lemon juice
- 1 tablespoon coconut oil
- 1/4 cup shredded coconut
Instructions
- Mix all the ingredients except the shredded coconut in small bowl until blended.
- Roll into 10 bites size balls.
- Roll ball into shredded coconut to cover outside of bite.
- Place cookies in the refrigerator to set.
- Enjoy!

Yum! I love the idea of no-bake bites, bit so many of the recipes you see around are full of high FODMAP ingredients like dates. So glad to find a version I can eat!

These are so easy to make and delicious too….anything with lemon and coconut works for me! Paired with a half serving of melon it’s great as mid-morning snack that doesn’t bother my stomach. Yum.

Any suggestions for people who don’t like coconut? These look great; was thinking of trying them this weekend. Maybe rolling them in sliced almonds rather than shredded coconut. Any other suggestions for a coconut substitute? Thanks!

I might finely chop up pecans or almonds and roll mixture in the nuts vs. coconut.

Small amounts per Monash app is allowed (for almond meal)–1/4 cup/ 24 gram limit per serving.

Oh, I didn’t notice it because almond meal has a red sign in MU app and I assumed that it’s strictly forbidden 😉
