Irish Soda Bread


1/2 cup butter (at room temperature)

1 cup sugar

4 cups all-purpose unbleached flour

3 tsp baking powder

2 cups buttermilk

1 cup raisins


  • Preheat oven to 350 degrees.
  • Cream butter with sugar until blended.
  • Mix in flour, baking powder and buttermilk.
  • Fold in raisins.
  • Add mixture to lightly oiled 9″ spring form pan.
  • Bake for 40-50 minutes (until cake tester comes out clean)
  • Bring my friend Meg and her son Jonah a piece ( oops, that may just be on my directions :) )
