Forbidden Rice Salad

Lotus foods provides a fabulous organic forbidden rice product.  Our local market, Star market provides this great tasting rice, in the Wild Harvest section. Lotusfoods.com is a great place to check out a wide array of unusual rice products and interesting recipes too.

Ingredients:

2 cup Forbidden rice, cooked

1 red pepper, diced

1 jalapeno pepper, diced

1 cup shredded carrots

½ cup shredded broccoli

½ cup water chestnuts, sliced

2 green onions, sliced

3 TB. Garlic Chili Paste (found in Asian section of grocery store)

3 TB. Reduced sodium Tamari soy sauce

2 TB. Rice vinegar

2 TB. Sesame oil

2 TB. Olive oil

  • Toss rice, peppers, carrots, broccoli, water chestnuts and green onions in medium size bowl.
  • Add warm cooked rice.
  • Whisk together garlic chili paste, soy sauce, rice vinegar, sesame oil and olive oil.
  • Drizzle dressing over rice and vegetable and fold gently to blend.
  • This salad is great warm or cold.  Add vegetables close to serving time, as the purple color of the rice will make the veggies purple too!

    Thank you so much for your blog. A low fodmap diet was recommended to my husband two months ago and his doctor’s only recommended resourse was your blog. Your resources have been so helpful. Thankfully this diet has helped my husband immensely. The Forbbiden Rice Salad recipe looks great but I am concerned about the garlic chili paste. Should I omit that ingredient?

    1. Virginia-I would not try the Forbidden rice dish at this time. Some of my very early blog recipes are not fodmap friendly! Stick with recipes in the fodmap recipe section or recipes I have provided in the past year. When I first started my blog I had no idea I would be doing a low FODMAP blog- but my followers were all wanting this info so I started limiting all my recipes to low FODMAP.

  2. thank you so much for creating such a useful blog! i have never been diagnosed with IBS. I have had some problems with lethargy and went in for a food allergy test. my reactions to dairy and beef were through the roof. two of my favorite things! i’ve omitted all dairy and beef from my diet, and i sill have problems with digestion, bloating, gas, stomach discomfort.

    i decided to eat nothing but fruits and vegetables because i had a slight gluten allergy as well. and nothing but produce has GOT to be good, right? oh boy did my stomach issues sky rocket! through some google self-diagnosing (lol) i have come to realize that i may have an intolerance to fructose. i’ve scoured the internet for resources on fructose intolerance and have come across FODMAP diets.

    It’s difficult for me as I’m in the military and I don’t have an oven in my barracks room. there are so many choices and options on this blog that i can’t even begin to thank you. with not being able to eat fructose, dairy, beef… easy on the gluten.. my diet is pretty limited. i was feeling defeated. i can’t perform while feeling lethargic and experiencing such stomach discomfort. i think your site has saved my life. it’s given me hope at least. some day when i’m a big ol E5 i can get BAH and move out in town, get an oven *oh the things i miss* and really expand my FODMAPness.

    I am sorry for such a long comment, i understand your time is probably extremely limited because manning such an impressive blog has got to be time consuming. but i just wanted you to know that your efforts do not go unnoticed. there are people that truly rely on blogs like this. your information is helpful, your blog is a happy place, and you’ve helped feed me. my mom is very relieved to know that i’m no longer starving lol!
