Forbidden Rice Salad

Ingredients:

2 cup Forbidden rice, cooked

1 red pepper, diced

1 jalapeno pepper, diced

1 cup shredded carrots

½ cup shredded broccoli

½ cup water chestnuts, sliced

2 green onions, sliced

3 TB. Garlic Chili Paste (found in Asian section of grocery store)

3 TB. Reduced sodium Tamari soy sauce

2 TB. Rice vinegar

2 TB. Sesame oil

2 TB. Olive oil

  • Toss rice, peppers, carrots, broccoli, water chestnuts and green onions in medium size bowl.
  • Add warm cooked rice.
  • Whisk together garlic chili paste, soy sauce, rice vinegar, sesame oil and olive oil.
  • Drizzle dressing over rice and vegetable and fold gently to blend.
  • This salad is great warm or cold.  Add vegetables close to serving time, as the purple color of the rice will make the veggies purple too!
