I love the combo of oats, seeds and nuts!…And to have these ingredients nicely mixed up into a tasty low FODMAP on-the-go bar…really works for me.
Ta dah! Introducing a super yummy no bake granola bar…
I have shared other granola bars and energy bites on my site but this recipe is a little different. For one, they are addictive. {Ha!} For two, the nut flavor is more subtle. I did add a little dried cranberries for a hint of fruit (within the Monash University 1 tablespoon limit per serving).
With this recipe, I experimented with a little golden syrup. Golden syrup is a low FODMAP suitable sweetener made of sugar cane syrup. It is sticky so works well in making homemade granola bars.
These bars are a great treat for a child’s lunch box or a yummy grown up snack. 🙂
I used steel cut oats but you can easily sub in old fashioned oats too.
Cranberry, Oat and Seed {No Bake} Granola Bars
Ingredients
- 12 bars: limit to one bar/serving
- 1/4 cup coconut oil
- 1/4 cup golden syrup (check baking aisle of Whole Foods)
- 2/3 cup uncooked steel cut oats (sub in old fashioned oats if you like)
- 1/4 cup oat bran
- 1/4 cup dried cranberries, chopped
- 1 cup suitable nuts and seeds (I used a mix of sliced almonds and sunflower seeds)
Instructions
- Line 8 x 8 inch pan with parchment paper
- In medium sauce pan, add coconut oil and golden syrup over medium-low heat until oil melts.
- Add in oats and oat bran stirring for about 5-8 minutes to slightly softened oats.
- Take off heat and fold in cranberries, nuts and seeds.
- Place mixture in square pan and top with another piece of parchment paper.
- Press parchment paper very firmly into pan to create a firmly packed granola bar.
- Place pan in refrigerator to cool.
- Cut cooled bars carefully into 12 servings. Store in air tight container in refrigerator and layer parchment paper between bars to prevent them from sticking to each other.
