Big News! I have officially joined the team at Epicured!

Hey Friends! I am excited to share with you that I have officially joined the team at Epicured, a healthcare company that harnesses the natural restorative power of food to help people eat better, feel better and live better. As the first low FODMAP and gluten-free meal delivery service, Epicured makes handcrafted meals to provide its customers with IBS, Crohn’s, Colitis, SIBO, and Celiac Disease an easy (and delicious) way to achieve better digestive health.

As Epicured’s Vice President of Nutrition and Translational Science, I will work with the culinary team to translate cutting-edge science into evidenced-based menus of fresh, delicious, and well-balanced food. I will also continue to build clinical partnerships across the country, helping the meal service to launch new research programs and promote access to registered dietitians for its subscribers. My initial major contribution to Epicured has been to facilitate partnerships with 2 major US research centers. How cool is that? Currently, Epicured’s food is being utilized in clinical research trials to ensure diet compliance and to advance the research to better understand the effects of FODMAPs in the gut.

Here I am with the world renowned chef, Dani Chavez-Bello. Chef Dani leads the Epicured kitchen, infusing his fine-dining expertise and belief in the healing power of food. Chef Chavez-Bello has cooked in some of the best kitchens in the world, most recently at Bouley, where he also served as executive R&D chef and created the Michelin-starred restaurant’s unique teaching program. Inspired by the mission to make truly healthy food more accessible to everyone, Chef Chavez-Bello joined Epicured in January 2019.

Epicured is partnered and works closely with many of the best doctors and dietitians. Epicured offers a Partners in Health program that provides clinicians educational tools, a complementary sampler box of Epicured food, clinical webinars and much more. Learn more here. It has always been extremely important to me to work with people that have strong moral principles, share my passion for food and science, as well as know how to have fun! 🙂

If you know me, you know I love a good smoothie or smoothie bowl. I just love the flavor and fun pink color of these nourishing dragon fruit smoothies.

Seriously, how gorgeous is this Warm Autumn Salad ?   This hearty salad is made with just the right amount of low FODMAP ingredients and complimented with a delicious mint vinaigrette.

    That sounds wonderful, congratulations! What a great company! I wish we had something like this in Europe… Sounds like you are the perfect addition to their team!
    On the side, may I point out something in your article: The photo of the Warm Autumn Salad suggests the dish contains 5 Brussels sprouts, which would be 2.5 times the amount that would pass as low FODMAP. I would prefer if Epicured’s photos would reflect the actual composition of the dish and not something unrealistic in order to be more photogenic…

      Hi Tina, FODMAP content is truly based on weight vs. the number of items. For instance, berries can be small or very large. The same goes for other veggies. The Brussels sprouts portion range is 38-60 grams to maintain a green to yellow/amber light status. Amber items can be used during the low FODMAP elimination diet–just not at every meal. These Brussels sprouts are very small and cut in half.
