Trader Joe's carries a great gluten free flour blend that appears low FODMAP to me--in a pink package---my local store carries it regularly. But most large grocery chains have Bob's Red Mill Gluten free 1 to 1 baking flour. Not all Bob's Red Mill gluten free products are low FODMAP (some contain bean or soy flours) but some work!

Hi Kate, thanks for sharing what seems like such a yummy recipe. One question for you! Where do you suggest is the best place to get low FODMAP flour? I've been having a hard time finding GF flour at Trader Joe's or Stop and Shop. Thanks, and enjoy Vermont!

Thanks for catching my error, Esther. The milk should be lactose free milk. The vinegar can be white or lemon juice. This will not change the lactose content but rather make the milk a different consistency and a bit more tart--which somehow makes the recipe a bit richer in flavor.

Kate .. Have a super great weekend !
Depending on where you are in Vermont you may want to consider stopping into the King Arthur Flour Store if you have never been .. Lots of interesting kitchen stuff including various gluten free options ..
http://www.kingarthurflour.com
This berry crumb cakes looks wonderful .. ! Thank you !
Am wondering what type of vinegar used to remove lactose ?
Do you think it would be suitable for those with dairy intolerance ?
Great travels Kate !

The boxed coconut milk has been tested and is high FODMAP. Not sure the coconut milk would create 'buttermilk'. I might just add the canned coconut milk as is--and see how the recipe works out!
