Kate that has got to be the most beautiful looking salad I've ever seen! Brava! I'm not used to fruity salads, but am learning they are quite appealing, especially with a good savory (and FODMAP-friendly) cheese. I tried green papaya (i.e.unripe) and that suited my stomach to a T (possibly for the v low fructose content). Feeling inspired to do an Asian style, FODMAP friendly salad....thanks for your wonderful blog!
