Hi Sharon, Have you tried baby kale leaves?  In the US, Olivia organic boxed salad greens have a baby kale option. Or,you can food process the leaves too so they resemble chopped parsley, you can massage the kale leaves with olive oil and this breaks down some of the toughness.  BUT, you may just not like the taste and that&#039;s okay too!  If not, try spinach in this recipe as well.]]></description>
