Creamy Mac ‘n Cheese with Artisan Granola Topping

Hello FODMAPers!

Everyone likes a little comfort food now and again, and mac ‘n cheese tops the list, right?

I created this low FODMAP recipe with gluten free pasta and a homemade low lactose mustard-infused creamy cheddar cheese sauce. So….good! I topped this flavorful mac ‘n cheese with Case de Sante’s Golden Turmeric Low FODMAP Artisan Savory Granola. This artisan granola blend is a nice mix of corn flakes, puffed brown rice, quinoa, pumpkin seeds, walnuts, pecans, sunflower & sesame seeds infused with turmeric. The granola adds an extra layer of delicious flavor, good nutrition and makes a nice crunchy topping.

      Because butter and hard cheese are low FODMAP. If you can’t eat dairy, its possible you could try another alternative cheese and vegetable oil in this recipe…but my recipes on this blog are primarily focused on the low FODMAP diet.

    I assumed you put the mustard in the sauce? I didn’t have the granola so I looked up the ingredients and created a topping made with low fodmap bread crumbs, ground turmeric, and chopped pecans and walnuts.

    Hi Kate!

    I’ve been following the FODMAPS diet for awhile now, and for the most part have identified my trigger foods. However, I find that I am now way more sensitive to small amounts of certain foods that I was not as sensitive to prior to starting the FODMAPs diet… What should I do? Incorporate small amounts of the food more regularly into my diet to get my body used to it, or say goodbye to those foods forever? 🙁

      Tolerance to FODMAPs in the diet can change over time. NO…do not say goodbye to those foods forever! Work with a dietitian to guide you. It’s hard for be to provide individual guidance w/o knowing your history.
