Spring Mix with Gorgonzola, Slivered Almonds, Oranges & Sweet Orange Dressing

Spring is here! With warmer weather just around the corner… well, maybe that is a little wishful thinking here in New England…I decided to create a refreshing salad recipe for you to try this week.

I love the mix of sweet and savory flavors in my salads with a smattering of nuts for crunch, fruit for a hint of sweet and good nutrition, and, oh, and a little cheese doesn’t hurt either!

Today’s salad combo: spring mix, mandarin oranges (see tips below for selecting), slivered almonds, Gorgonzola cheese drizzled with one of Casa de Santé’s newest products, a low FODMAP dressing, Sweet “your main squeeze” Orange Dressing, a flavorful blend of balsamic vinegar, organic extra virgin olive oil, sweet orange oil and sea salt. That is it! Simple ingredients with a BIG flavor. Perfection!

The sweet orange dressing pairs perfectly with this salad. If I say so, myself! 🙂

The Original Grapefruit Dressing has a lovely citrus flavor. The ingredients are simply organic extra virgin olive oil, white balsamic vinegar, grapefruit oil and sea salt. The grapefruit flavor is provided by the grapefruit oil added to the dressing. Although grapefruit, the fruit, has FODMAPs, the essential oil does not! Yay! This dressing pairs nicely with a salad made with baby spinach, toasted pecans and fresh sliced strawberries.

A note about canned mandarin oranges: When selecting canned mandarin oranges, be sure to read ingredient list. Avoid products with added pear juice or high fructose corn syrup. Wash and rinse the oranges prior to using to reduce any residual sugar. You can also use small fresh orange slices in this salad recipe if you prefer.

    Yum! Not tried orange with blue cheese/gorgonzola before…will have to since classic pairing with blue is honey and that does not sit well with me. Thanks Kate!!!

    Is it possible to get the salad dressing without the “balsamic” vinegar? Perhaps rice vinegar? Besides digestive issues, I am plagued with migraines and balsamic vinegar seems to be a trigger. It would be nice to have an option.
