Happy Sunday!  And Happy Saint Patrick’s Day! I loved this quotable I found online….and so very true.  st paddy

I am busy editing the final stages of my low FODMAP e-cookbook.  I was so fortunate to have the Monash University FODMAP researchers review my cookbook to ensure that it’s FODMAP friendly.  I hope it will be up for sale in the next week or two.  I have included a variety of recipes…about 50 from delicious and nutritious breakfast meals, spectacular salads, kale chips, ooey-gooey mozzarella sticks to delicious sweet treats.  I am excited to share it with you.  I have included a few of my blog follower favorite recipes too.  I will be giving $1 of each of my cookbook sales to Monash University researchers toward FODMAP research.  Gotta give back to those smart, innovative and hard working team so we can learn more and more about FODMAPs. There is still so many more foods to be analyzed!  SO…I will be sure to let you know when the cookbook is ready for download!

Well…Spring is trying oh so desperately to make its way from the clutches of winter here in New England.  There is one more storm pending tomorrow but the daffodils just don’t know about it yet….. or maybe they do??!spring bloomin

Well, I wanted to show you one of my recipes that will be included in my new cookbook. It’s a high fiber breakfast porridge. This was super filling, creamy and yummy.  Russ and I enjoyed it this morning.  So very delish and I know will be a great fuel for our run. high fiber porridge

    Hello Kate,

You mentioned garlic in a previous post. I am on a Fodmap diet and am wondering if garlic is completely forbidden or if I can eat a little and, if so, what’s the best way to prepare it.
Thanks again for all the great info.

Garlic can NOT be eaten ‘straight up’ on the low FODMAP diet–but you can infuse the garlic flavor into oil and then use the oil for whatever recipe you are using. Simply add large chunks of garlic into olive oil and simmer over low heat in a skillet. When garlic flavor permeating the room. Shut off the heat. Let cool down and store in the refrigerator to use in recipes for up to 7 days. Should not be stored at room temperature. When you refrigerate the oil will solidify a bit.

Whole soybeans are high FODMAP and soy flour as well. Firm tofu and tempeh are low enough in FODMAPs so can be included. Soy milks vary – if made with only soy protein isolates it would be acceptable but not if made with whole soybeans. Soy sauce and soybean oil would be low FODMAp. Hope that helps a bit.

      Kate
